2 cups chicken broth (Edited at 7:45pm: This should be 2 CANS of 14 oz chicken broth...closer to 4 Cups....oh well, I've made it twice now with the reduced amount and it's fine either way.)
1 TBL olive oil
1/3 C diced onion (I used one whole sweet)
1 clove garlic, minced
2 cups peeled and diced (1/2") butternut squash
1 15-oz can small white beans, drained and rinsed
2 Cups fresh spinach
salt and pepper to taste
The recipe cooked the onion for 2 minutes, added everything else but the spinach, cooked it 10 minutes, then added the spinach and cooked it for 5 minutes.
I disagreed.
Add oil, saute onion until soft and translucent (about 5 minutes). Add garlic and cook 1 minute. Remove from pan. Add a bit more oil to pan, add butternut and saute for 5 minutes. Add a bit of broth if it sticks.
Add butternut and onion mix to broth. Cook 5 minutes. Add beans and spinach and cook 2 minutes.
The recipe topped with minced fresh sage. I thought that was bitter, but Larry liked it. I tried a second batch with dried tarragon and enjoyed that better. Marjoram might work too.

Makes 4 servings.
This recipe doubles easily. Use 1 quart boxed broth, 2 cans of beans, 1 whole butternut, 2 onions, 2 garlic and a bag of spinach.
