Stupidly Simple Peach Cobbler. New-to-me technique for the topping makes it lighter.

Okay, I made half this recipe because I only had 5 peaches. I think I've eaten half of the pan already! The fruit shines through with nothing but lemon juice dressing it. (No sugar in the fruit.)

Will be making this again with other fruit. Nectarines are gorgeous this year.

I've got generic peaches roasting right now thanks, Cindy! for this.

I'll probably only do a half-batch for the library since peaches are $2 a pound and I just roasted 3 lbs worth....not enough for a full recipe.
