I serve this a lot and no one will ever believe that it only has 3 ingredients. It does have to be turned and basted often, though.
Combine in a a baking dish:
4 chicken leg-thighs (or a cut up chicken, or just 8 thighs) with the skin pulled off.
About 1/3 cup soy sauce
Coarsely ground pepper, (lots of it)
If you have time, let marinate in the refrigerator a couple hours. (If not, don't worry.)
Bake at 375*F for 45 minutes to an hour, turning and basting often to give the chicken a rich dark glaze and adding more soy sauce if necessary. The juices should be reduced to a dark syrup. Serve with steamed rice.
