Suggestions and Recipes Please - Planning a Luncheon and I am stumped for a salad - the entree ...>

I think this entree needs to stand on its own. I would serve the simplest of salads,

just baby lettuce, maybe some very thin slices of red onion, with a simple vinaigrette.

OR, Salad Mimosa: Butter lettuce tossed with vinaigrette (maybe just using mustard and lemon juice, olive oil, S&P), sprinkled with finely chopped hard-boiled eggs and parsley. (Presumably recalling a mimosa tree in bloom.)

OR, something with pears and grapefuit, and maybe avocado ('tis the season.)

 
I'd keep it really simple too. Just mesclun, shallots and an 'interesting oil' vinaigrette. Avocado

on the side?

I agree with Ang. With that mix of flavors and textures, I'd have simple sides, such

as roasted green beans, zucchini, grilled cauliflower, or spinach. Yum.
