two delicious recipes.

Smoked chicken is the main ingredient. I smoke my own - you can use bought smoked chicken if you don't have a smoker.

I do not have exact quantities but you basically do not want to have either of the following recipes too sloppy. I usually use 6 smoked breasts for the salad and two for the appies. I salt the chicken breast well after removing all signs of fat and smoke for about 20 mins altogether. I dice the chicken and add to the mayo while still warm.

Smoked Chix Salad.

Simply gently stir together diced smoked chicken in mayonnaise (homemade is always best but Hellman's is good) Madagascar Green peppercorns and thinly sliced red onion. Leave to chill for a few hours. About 6 breasts to one jar of mayo and 1/2 to one red onion and 3 TBL of peppercorns. About!!!

Smoked Chicken Appies

You can use those wee filo cups which you refresh in a hot oven for a few mins. or pop this onto toasted baguette slices.

Fill with: diced smoked chicken that you've stirred gently into mayonnaise, good squeeze of lemon juice, diced peaches (I use canned as we seldom get a good fresh peach here) and finely chopped tarragon.

Enjoy.
