Still not having replaced my vanilla from my spree of Christams cookie-baking, I added maple extract instead of vanilla as called for in the recipe, which was just the "deluxe" recipe on the back of the Bisquick box - 1 cup Bisquick, 1/2 cup milk, 1/2 tsp baking powder, and 1 T fresh lemon juice.
I added 1 tsp maple extract, and since I was out of eggs too (just used the last for a pan of scrambled eggs), I used a T of mayonnaise having read somewhere that is a good sub for eggs in baking.
'Cooked them on the trusty oven cooktop, and when golden, filled them with a couple tsps of cream cheese and a tsp of favorite jam and rolled like blintzes. Served with espresso and pineapple-orange juice, they were great.
Definately will repeat this again.
