- Made a big pot of chili; great for snow days. Used Lukins recipe for chili for a crowd. Sausage was on sale so I was happy!

- dh decided that he wanted to go back on South Beach; (I think he does this every Jan) : ) I think the manufacturers of the "necessities" of the diet must know alot of people like dh. Prominent displays and sales on laughing cow; low fat string cheese, tomato juice, etc... ((Obviously he did not partake in the chili!)

-Made Dawn's pepper / salt almonds....Brought them to a party on Friday, a huge hit. ((Thanks Dawn for a great recipe!)

- Purchased a few lbs of chicken breast for dh new diet. Was thinking of Sandra's Chicken Pinot Noir. Any other ideas for a baked chicken breast recipe? I love Meryls Feta Chicken Breasts, but not sure if dh wants feta now....

- Making Steve's recipe for Roasted Tomatoes from a bag of Trader Joes Toms that I was not able to use in time.. The Toms are good, but not great, so I think that roasting will be perfect!

I am sure I had a 6th; but some how lost what it was... Will get back if I recall! : )

 
Sunday Six

I'm glad you liked the Black Pepper Almonds.

-my pot roast is in the oven, slowly cooking. I browned it in a little olive oil, added some chopped onion and a can of French onion soup. I didn't have any beef broth, beer or wine. Sheesh.

-I made a batch of Gayle's caramels, non-spicy.

-I baked an eggnog cake to use up the rest of the eggnog.

-Dinner tonight; pot roast, mashed potatoes and gravy, steamed green beans and some chocolate-dipped caramels.

-We are expecting snow over the next couple of days. I stocked up on everything except beef broth, beer and wine.

-I finally came up with my personal chef menu, well I am almost done with it. Yay!

 
Weekend 6

- Watched the MOST AMAZING football game in the history of the game. Go Seahawks! Woot! smileys/smile.gif

- Happily went through back issues of cooking magazines. Clipping recipes for my "someday" pile and recycling the rest.

- Corrected 90 out of 180 papers I was supposed to do. I'll take half... although as I keep reminding my 5th graders, "half" is not passing.

- Received a gift batch of my mother's Ham and Lima Soup already pre-frozen into individual servings.

- Stripped all the beds, did approximately 947 loads of laundry, and then afterward found approximately 763 more in my teenagers' rooms.

- Celebrated my return to the fold with a batch of grilled ginger-soy chicken thighs with a side of our family's favorite: NLB's Spicy Pineapple Fried Rice.

 
Being an afficionado of chicken thighs and Asian food, I would love to see your ginger-soy chicken

thigh recipe as well as NLB's spicy pineapple fried rice when you get a chance. They sound very yummy!

I almost cried tonight when the Eagles were just about to make a touchdown and beat the Green Bay Packers in the wild card play-off when suddenly, in the last minute of the game, the pass for the touchdown was intercepted by the Packers! Boo-hoo-hoo-HOO!!

 
Ya got that right, totally AMAZING! However, after the last Super Bowl

fiasco I am hesitant to get to worked up. That was just wrong and it hurt!

 
For the chicken, I just marinated skinless boneless thighs and then quick grilled them...

Here's the marinade... I doubled it today and marinated the chicken thighs about 4 hours or so:

Soy-Ginger Marinade
6 T. soy sauce
1/4 c. rice vinegar
2 T. sesame oil
Generous 1" piece of ginger, grated
2 cloves garlic, pressed

My family loves nlb's pineapple rice. I always use Tsuru Mai California Brown Rice because I think it's the bomb.

Weekend Six

A little late, but that's a whole other story and not worth mentioning!:

Made chicken and biscuits for Saturday's supper. I still would like to find a good recipe for the sauce, just used some cream of chicken soup this time, with leftover chicken breast, and frozen peas and carrots. Easy, quick, good.

More snow, and since there wasn't enough for the snowblower this time, we took turns shoveling.

Went for a guided winter walk at the local nature center on Saturday. Sunny and nice to get in the fresh air. Maybe I picked up some vitamin D.

Bought some raspberries and blueberries to go with Greek yogurt. Why do I have these cravings in the dead of winter...

Made hummus Sunday night. Or should I say yummous.

Also made Marianne's raw tomato sauce to put on top of raviolis for Sunday's dinner. Very good with a little dried lemon balm on it (leftover from the summer).

 
Oh my-my-my, both look great Carianna and thanks for posting. This is on my "try VERY soon" list!

I also love brown rice and have a big bag of Lundberg's Long Grain Brown that I've also used for Louisiana Jambalaya and other recipes in lieu of white.
