Sunday Six

I haven't had time to read the forum literally for months, but I have spent Spring Break catching up - so much to read! How exciting to see people like marg and Carianna again!

I haven't seen a Six for a while, so here's mine:

1. I LOVE Richard's Day-Before Duck, it's what I've been cooking on the rare occasions when I have people over for dinner. I always serve it with red cabbage as one vegetable, and last night, I made Clare in Rescue's (can't remember where she is now) Crunchy Pea Salad as another. Unfortunately the people who came don't eat what they call 'the C-vegetable'. For once, I didn't think to ask because they had told me that they didn't eat fish, but I guess there's more for me in the fridge. (I hadn't realized how many of my starters have fish in them.)

2. I made charlie's no-bake blueberry cheesecake with strawberries, as it didn't seem right to make a non-strawberry dessert at this time of year. It was very good; unfortunately I forgot that sliced glazed strawberries produce liquid, and most of the topping slid off as I moved the dratted cake to a serving platter. Luckily they went into the sink and not the floor.

3. I made one batch of marmalade from our Valencias, and was supposed to make more and a batch of preserved orange this week, but somehow I never got around to it. Resolution: grate and salt the oranges TODAY!

4. The strawberries are so good and so cheap this year. Maybe I should try one of those mini-batches of jam, as I don't seem to have the drive to make large batch.

5. The *best* flavored water is plain water (from the Brita, of course) with a sliced strawberry or a sliced guava in it. Delicious and calorie-free. Requires one to remember to make it, though.

6. I didn't feel like cooking after yesterday, so today's dinner will be London Broil cooked on the grill by DH. Have been using Dawn in MO's recipe for years and years - thanks, Dawn!

Back to school tomorrow. Thank goodness I have been told that I still have a job next year.

....Lana, be on the lookout for my car in your driveway! Here's my six

1. Made Traca's Chocolate Stout cupcakes yesterday. Very nice. Amazing warm, only slightly less when room temp. I'm testing them again today to see how they age. How I suffer for my art.

2. Defrosted more of cheezz's "Swiss Meringue" and blended in the ganache from the above cake as we wanted a lighter and fluffier icing. That stuff is amazing, but it melts easily in heat. I finally realized our kitchen was 86 degrees when I noticed the icing was dissolving.

3. Made my first batch of "collards" EVER. The woman next to me at the farmer's market said to cook them all day, so I did. Then I looked up recipes online and they say they are done in 45 minutes. Oh well, they taste fine, if a bit tough.

4. Baking Disney's Wilderness Lodge cornbread as we e-speak to have with #3.

5. Making Giana's "pea and dried tomato" spread to boost the protein for dinner tonight.

6. Steel oats, almond milk, cranberries and greek yogurt (Three Greek Gods) for breakfast.

Oh Marilyn, I saw your post about the tempering machine

I have only used it a couple of times (because it arrived during the summer) and I really liked it. The first batch of chocolate didn't melt, but that was the choc that came with the machine, and I think it seized from being shipped during a FL summer. Every other type of chocolate I used was great. The pieces I kept for myself didn't bloom, so it definitely works, and it's really easy to use. The downside is that it is noisy. I also realized that I can't do my BIG Easter bunny mould because that requires 2 lb of chocolate and the machine does a maximum of 1.5 lb. I'm very happy with it.

Regarding the comment that was posted below yours - I don't trust thermometers, and I'm far too terrified to temper choc in the microwave. I'm really impressed with those who are able to do it.
