1. Parent-of-an-infant food = food that can be eaten with one hand. And no, I did not drop Pad Thai on my baby today; why do you ask? (Yes, I did.)

2. For the first time in six weeks, I made a serious weekend breakfast, which we ate at the kitchen table, like civilized people: Dutch Baby w/ strawberries. Doesn't sound like much, but I live for weekend breakfasts, and the last six weeks of them have been toast on the couch. Consequently, we're still picking crumbs off both couch and baby.

3. Made pasta with salmon, lemon cream sauce, and vegetables for dinner last night. Eaten on the couch--tot in one hand, fork in the other.

4. Enstrom's Dark Chocolate Almond Toffee. A family friend has been sending this to my parents for as long as I can remember, at Christmas--this year, my parents kindly sent it East, and my brother and I split the box. Colorado company. Insanely good toffee. Near tears-inducingly good when consumed on two hours of sleep.

6. Despite how bleak all that may sound, we are getting out and about--to the bakery, grocery store, coffeeshop--especially now that I can drop (figuratively speaking!) Madeleine into the Baby Bjorn carrier, which is way more convenient than the carseat-stroller combo we had to use for the first five weeks. Still need a little more practice before the lunch Richard mentions above, though, smileys/wink.gif

(p.s. Sweet Potato Soup sounds wonderful!)

1. I made Meryl's cornbread (moist cornbread recipe) to go with simple chili. Great with honey and blackberry jam.

2. Made a small batch of stuffed cabbage to use up some ground beef and crushed tomatoes. Worked out good because the cabbage had started to freeze (left in the car - one bag usually gets left in the car after shopping!) this week and so the leaves were easy to remove, and now I have dinner made for tonight.

3. Went out for lunch by myself yesterday (dh at a game with "the boys" and dropped kids off at the Y) and unknowingly locked myself out of the car. Long story short, phone locked inside car, restaurant closing, about 10 degrees outside, and 24-hour laundromat was closed(?), so I ended up in a tattoo parlor calling AAA again. Geesh.

4. Saturday's dinner was Chicken thighs with Cranberry-Pear chutney. Betty Crocker recipe. Easy.

5. Was going to make Cathy Z's shrimp with coconut and red curry paste for Sunday night, but I was pooped by the time I got home so we had subs.

6. Downton Abbey :eek:( Won't spoil it for anyone who didn't watch it yet, but :eek:(

 
Sounds like you had a wonderfrul Sunday, Erin. Here's mine smileys/smile.gif

1) Breakfast: made my uptenth version of gluten free low carb bread, this time from a box!
As I have noticed that my body works way better when I don't eat wheat, I've decided to try one month off gluten to see if there's any noticeably change. But bread wise this has been a horrible month so far. Most gluten free low carb breads have turned out to be more like a fritatta with seeds than actual bread, but the boxed version was actually pretty good. And with no atificial stuff in it, I think it's a keeper. Bought two more boxes today smileys/smile.gif

2) I finally made a veggie lasagna that I really like. It turned out to be pretty easy: I added big chunks of broccoli, onion and zucchini to the tomato sauce. (Big chunks of veggies doesn't go mushy too easily), and then to the kicker: I made the lasagna with only one layer: veggie tomato sauce at the bottom, then pasta plates, bechamel sauce and the cheese. Worked like a charm.

3) Went furniture shopping and ended up buying a cabinet from the 1750-ies. The antiques store also had a cafe with the best sour cream waffles I have tasted in a long time. I especially love sour cream waffles with a mix of sour cream and strawberry jam on top. It might sound like overkill using so much sour cream in one dish. And it is, but sometimes over the top tastes wonderful! smileys/smile.gif

4) DH is sick with The Man Flu. I've been a nurse, a chemist, a soul searcher, psychiatrist and cook this weekend. Ended up giving him two C-vitamin pills and one D-vitamin pill but telling him it was medicine. He immediately felt better. Have decided not to tell him so I can repeat the same procedure next winter, when the next wave of Man Flu arrives. Love placebos! smileys/smile.gif

5) I ate my last chocolate leftover truffle from Christmas this weekend. Can't believe it made it almost to February. It was an Anthon Berg, plum in Madeira truffle. LOVE those!

6) I've been trying to come up with a good spice mix for vegetable dishes, inspired by the Mediterranian (can't imagine I managed to spell that place correctly...) but I can't decide wether to add estragon or not. Will have to try a few more dishes before I decide. I haven't found a spice (herb) mix for veggies in any of the grocery stores here, so I feel like I'm breaking ground here.

 
Love your weekend Erin. My weekend started on Sunday with my daughter and I having a delicious lunch

on the terrace of the Carmel Forest Spa. We then proceeded
to massages and wraps and dinner.
Monday was much of the same... I am now totally rejuvenated and about to attempt to copy the Jerusalem artichoke soup that we had there.
The food was superb and I bought the cookbook.

 
Don't worry, soon she'll be feeding herself and throwing the food on you. One of my favorite pics

of my daughter is where she's sitting in her high chair with spaghetti and sauce all over everything and a very self-satisfied look on her face.

 
OMG, I meant tarragon! We call it "estragon" over here. Never thought of it "that" way before. LOL
