1. Speaking engagement over and I am so relieved.

2. The craft show that I put on was yesterday and it turned out pretty good for a first time show. I learned a lot and next year's show will be much better.

3. I had five women really step up and help out is the setting up and breaking down of said craft show. I am trying to think of a nice little thank you gift for all of them. Any ideas?

4. I asked Bubba what he felt like for dinner, and instead of his usual answer of "I don't know", I got roast chicken! Which sounds so good and will become a pot of chicken soup tomorrow.

5. I am excited to start doing some holiday baking now that most of my outside committments are finished.

6. I am going to try and get in the habit of making one pound loaf of bread dough from the the 5 Minute a Day Artisan bread cookbook. I want to make it the night before, leave it out and let it rise, then pop it in the oven for the kids for breakfast. I really like the idea of the house smelling like fresh bread in the morning.

 
To thank the 5 helpers, how about a food gift, like Poppycock or granola, both here in T&T and

I usually make both of those in a large roasting pan in the oven so it's easy to knock out all 5 of those gifts at once, with ease.

 
Weekend Six

1. Friday is weekend for me. Spent the day at d-i-l's taking care of my sick grandson while she and her MOm finished packing and moving to new home.
2 Home at 4 - what to make to dinner - promised
my very pregnant daughter we would come over with dinner for dinner! Comfort food - baked
fried chicken (half with Panko, half with grissini crumbs). Baked potates and mixed lettuce
salad. Easily prepared and cooked and easy to transport. Also make guacomole to use up a ripe avocado.
3.Sat,discovered some moths in my dry drawer and took it apart and sprayed. This was not on the agenda!.Threw out some old dates and found lots of pearl barley I had forgotten.
4.Made Mushroom Barley soup to take to
d-i-l. However they brought me the baby so I had
a lovely time with him.
5 Served hubby the soup and
made some tortelli from the freezer.
6.Sun. Begged off from work and had breakfast at a cafe with my DH, Daughter and s-i-l.

 
That is a good idea, but two of them are watching their sugar intake.

I came across this in my files. I will make up the jars, then place them in gift bags along with the Rotel, tomato sauce and a bag of Fritos. All they have to do is add a pound of ground beef or turkey and they will have an easy dinner. I think the poppycock is going to be on my list for holiday gift bags. Thanks Pat!

Taco Chili Mix

Amount Measure Ingredient -- Preparation Method

1 cup dried kidney beans
1/2 cup dried pinto beans
1 package taco seasoning mix -- (1 1/4-ounce)
1 package buttermilk salad dressing mix -- (1-ounce)
3 tablespoons dried minced onion
1 teaspoon chili powder
1/4 teaspoon ground cumin
1 1/2 cups corn or tortilla chips
Taco Chili:
1 packet Taco Chili Mix
4 cups water
1 can diced tomatoes and green chiles -- (11 3/4-ounce)
1 can tomato sauce -- (16-ounce)
1 pound ground beef -- cooked and drained

For the mix: In a 1-quart wide mouth jar, layer kidney and pinto beans.
In a small bowl, combine taco seasoning mix, dried salad dressing mix, onion, chili powder, and cumin. Wrap seasonings in plastic wrap or cellophane and place in jar.

Put chips in a bag and place in jar. Decorate with ribbon or fabric.

For the chili: Place beans in a large bowl, cover with water and soak 6 to 8 hours, or overnight. Drain and add to a Dutch oven. Add seasoning packet, water, diced tomatoes and green chiles, tomato sauce, and ground beef.

Heat to boiling, cover and reduce heat to low. Simmer for 2 hours, or until beans are tender. Serve with corn or tortilla chips.

Weekend Six?

* Made homemade graham crackers
* Made Carmel Apple Cheesecake for our Gourmet Dinner group....('nough said about that already)
* Made Candied Fuyu persimmons just 'cause I wanted to see how they would turn out. Had to make up the recipe. Will possibly use these in some recipe calling for candied fruit
* Found out son will Finally be getting his PhD (in infectious diseases)in December!
* Made Sesame-Coated Seared Ahi for dinner last night with Wasabi Mayo, yum!
* Buying 60 pounds MORE of walnuts (only 20 lbs are for me, I swear!)

 
My six

Yes, congrats to Luisa's son!

1) Went to a harvest supper at church Sat. night. A sure sign of fall. I just love those turkey-mashed potato-squash meals, and I love that they call them "suppers".

2) Cleaned out and vacuumed my car this afternoon - what a good feeling.

3) Made red pepper hummus today, and I think it turned out the best of any I've ever made. Found a great deal on Berio extra virgin olive oil and wanted to make something a little different with it.

4) Packed a backpack lunch and went walking along the old Erie canal - it was such a nice, sunny day. DH and I stopped and had a picnic lunch on one of the picnic tables. Fruit, cheese, crackers, and lemonade. Fun, and warm enough so we didn't have to wear coats, cool enough so it was nice walking.

5) Made Sylvia_in_Ottawa's (Canadian Living Magazine) black forest cookie bars - they looks great! What is my obsession with cookies and cakes lately! I'm storing up goodies for the winter?! Sending 2/3 of them to school with DD tomorrow for class party.

6) Going to attempt the anti-inflammatory diet again - as soon as these cookies and cakes are out of the house! ;o) Well, cakes are gone, but with 2 big bagfuls of apple slices in the freezer, and 2 containers of pumpkin puree in the refrigerator, I think the oven will be cranking out goodies again this week, especially if we get the expected cold spell.

 
Weekend Six...

- Saturday a friend too me out to run errands and to the store, my first real outing! I did okay, good to do the banking and buy food. And see the 10 hunky firemen shopping for groceries. My list was small and I had to rest a few times but I did it! I had to rest before and after putting away stuff and today my legs are sore. But the fever came back last night so I know it was too much to do. Grrr.

- so now that I have food and an appetite (yay) I made my family's club sandwiches for lunch. For dinner I made BBQ chicken pizza. So good!

- BBQ chicken pizza:
leftover chicken, shredded
1/4 red onion, sliced thin
1/2 large can pineapple chunks
chopped cilantro - 1/3 bunch
your favorite BBQ sauce
grated fontina cheese
a pre-baked pizza base

mix chicken with onion, pineapple and cilantro, add enough BBQ sauce to coat well. Spoon onto a pizza base and top with cheese. Bake 10 minutes at 400 or until everything is hot and melty. Top with more cilantro. Green onions are nice in this too.

- today I'm pooped and not hungry so I had a banana and hot cocoa. I love good hot cocoa! I heat a mug of milk in the microwave and add 3 T of Ghirardelli sweet chocolate, and a slosh of Baileys. Then a long nap! Lol.

- tonight I am going to make dinner, skirt steak tacos. I emailed my aunt this recipe and she said "It sounds great but is too much work." Amazing! How hard is it to season a piece of meat, make a small bowl of salsa, cook the meat and slice it? No offense to my aunt but that was the best laugh of the day.

- my friend who has been taking such good care of me called today. Her 16 year old daughter went to their priest's house last night for his son's 18th birthday. They played beer pong. And now she has the flu. There are just so many things wrong with this scenario I cannot begin to elucidate them all. I can say is that I am now officially an old fogey because all I could say to her is "Kids these days..."

Packed up stuff for a trip to Port Aransas with some girl friends for the weekend. It is the "Maybe Hot, Maybe Not" 30 - 50 mile bike ride. I don't ride, but I provide some great moral support and food!

Got out of town after our Zumba class, drove for 3 hours due south and had lunch/dinner at a cute little grill on the island. The grilled mahi-mahi was slathered with mustard and pepper before grilling and was delicious! Nice with a Shiner Blonde, ice cold.

Girls left at 6AM and I had the whole morning to beach comb, drink good coffee and swim in the condo pool.

They shopped at the farmers market and returned with lovely vegetables which we grilled for dinner with "chismol" (pico de gallo with cilantro and lime) and fried plantain tostones. For dessert we had shortbread cookies dipped in melted hazelnut chocolate. Played "Spit" until way too late.

This morning after another walk on the beach we prepared migas, corn tortillas and black beans for breakfast. It was so much fun cooking with good friends.

Now to get organized for Christmas! Yikes!
