While we aren't big game watchers, we stock up on snack-type foods and play board games while watching the commercials. This year we will have a house guest that is diabetic (type 2) and I wanted to plan the snacks around her diet. Any T&T suggestions?

Already on tap is sesame fried chicken and cauliflower popcorn.

I know it might be a challenge to find something to GO with it, but guacamole has actually been found to stabilize blood sugars (my doctor says, as well as anectodal evidence).

Also, while it's probably not the healthiest thing to have, fried chicken tenders, fried mushrooms, fried cauliflower - as you mentioned, are all low-carb choices.

And of course cheese and fruit (especially apples or anything with fiber).

Also tabouleh, and the following cucumber salad, served with crudites:

Cucumbers in Sour Cream

3 large cucumbers, peeled and thinly sliced
1 tablespoon salt
2 tablespoons cider vinegar
1 cup sour cream or yogurt
1/2 teaspoon chopped fresh chives
1/2 teaspoon freshly ground black pepper

Place cucumbers in a medium bowl, sprinkle with salt, and let stand for an hour or so. Drain cucumbers on paper towels, pressing to remove excess liquid.

Return cucumbers to bowl and stir in remaininig ingredients. Chill 2-3 hours before serving.

Along Dawn's idea of cukes, how about a nice Asian Coleslaw or Asian Cuke Salad?

Whenever there is an appetizer-type party, I always like to find some salads or veggies in the mix. These are some that are T&T that we have enjoyed. Also, what about lettuce wraps? There are a whole slew of them, and they are a nice low carb (low glycemic index) appetizer. Any whole grain salad will go along with her dietary requirements.

This is really good and you can leave out the mayo if desired. Just replace the sugar with Splenda, but do it to taste rather than 1/4 cup of Splenda. I also make a noodle salad like this subbing whole wheat noodles for the cole slaw.

D's Asian Coleslaw

Amount Measure Ingredient -- Preparation Method

Dressing:
1 cup mayonnaise
1/4 cup fresh lime juice
1/4 cup sugar
1/8 cup rice vinegar
1 tablespoon toasted sesame oil
Slaw:
1 bag coarsely shredded cole slaw mix
1 bunch cilantro leaves -- chopped
6 green onions -- thinly sliced
1 seedless cucumber, quartered lengthwise and sliced

Whisk the mayonnaise, lime juice, vinegar, and sesame oil togethrt until smooth. Mix the slaw, cilantro,green onions and cuke together and toss with dressing and refrigerate. Toss again before serving.

This is delish, once again, just sub Splenda for the sugar, to taste.

Thai Cucumber Salad

Amount Measure Ingredient -- Preparation Method3/4 cup distilled white vinegar
-- (can substitute
rice wine vinegar-less sharp)
1/3 cup superfine sugar
1/2 tsp. hot red pepper flakes
1/4 tsp. Kosher salt
2 1/4 lbs long Euro style cucumbers washed -- but not peeled
1/4 cup chopped red onions
1/4 cup chopped salted roasted peanuts

In large bowl combine vinegar, sugar, hot red pepper flakes and salt. Stir until the sugar is dissolved. Set aside. Score the cucumbers with a fork & then cut
into 1/4" slices. Stack the slices & cut into quarters. Add the cucumbers & chopped red onions to the bowl of salad dressing & toss well. Cover & refrigerate for 1-4 hours, stirring occasionally. Just before serving add the chopped peanuts. Toss the salad once more & serve in small individual bowls.

Ann's NOTES : I use one large Euro Cucumber and the rice wine vinegar. Also I use 1/8 tsp. of the salt. Serves 4-5 people. - - - - - - - - - - - - - - - - - - -

Celery and Blue Cheese Salad

Amount Measure Ingredient -- Preparation Method8 ribs celery, well-traimmed -- cut in 1/2" slices
4 ounces Maytag or other bleu cheese
2 tablespoons extra virgin olive oil
salt and pepper -- to taste

Cut 8 trimmed celery ribs crosswise into 1/2'' pieces, transfer to a bowl, the crumbled Maytag or other good blue cheese, extra-virgin olive oil, a little salt, and freshly cracked black pepper. Gently toss. Serve this salad well chilled.

This is so easy and went over pretty well. Not as big a seller as some, but it was a nice addition.

You could also make this into a pasta salad by adding some cooked whole wheat pasta into it.

CHRISTY'S BROCCOLI SALAD

Amount Measure Ingredient -- Preparation Method6 cups fresh broccoli florets -- washed and drained
1 bag peas, frozen -- baby
1 medium red onion -- halved and thinly
-- sliced, then halved
-- again
1 package Ranch salad dressing -- mixed with:
1 cup mayonnaise
1 cup milk
1/2 pound bacon -- cooked and crumbled
raisins and sunflower seeds -- optional

Place broccoli in a large glass or ceramic bowl. Pour the frozen baby peas over the broccoli. Place the red onion slices on top of peas and broccoli. Pour Ranch dressing over all, do not toss salad. Cover with plastic wrap and refrigerate overnight. When you are ready to serve, toss the salad and top with the bacon. Add raisins and sunflower seeds if desired.

You might want to omit the peas, in the broccoli salad though. They are high

in carbs. I make this using olive oil, a little milk, and about half the amount of mayonniase listed. Add shredded cheddar cheese, and halved grape tomatoes. But great recipes, Dawn!! Thanks for posting.

 
If you're going to have chips and dip, blue corn chips are fine, hummus, salsa.

If you want to have snacks sitting around, you could have them separate or make a mix of sunflower seeds, pumpkin seeds, walnuts, almonds, a few raisins.

Celery and cucumber to dip into hummus or spinach/artichoke dip/spread or roasted red pepper dip/spread

If you're going to have bread,rye bread or whole grain bread is good.

Beans are good too, if you are going to have some kind of salad, or chili.

I have a recipe I've never made but have made things very similar, from the ADA, using peanut butter, honey, carob or unsweetened cocoa...made into little balls..you can let me know if you'd like me to post it.

Amount Measure Ingredient -- Preparation Method

10 tablespoons butter
1/2 cup onion -- chopped
1 small tart apple -- peeled and chopped
1 pound chicken livers
2 tablespoons whipping cream
1/2 teaspoon salt
1/4 teaspoon pepper
2 pimientos -- cut in very thin strips

In a medium skillet over moderate heat, melt 3 tablespoons butter. Saute onion 5 to 7 minutes until soft and lightly browned. Add apple. Cook and stir until apple is soft enough to mash with a spoon. Place onion-apple mixture in a blender or food processor fitted with the metal blade.

In the same skillet, melt 3 tablespoons butter. Saute livers over high heat 3 to 4 minutes, turning until they are browned outside but pink inside. Add livers to onion-apple mixture. Add 2 tablespoons cream. Process until smooth. If mixture is too thick to blend, add more cream.

Place pate mixture in a small bowl and cool completely. Bring remaining butter to room temperature. Stir it into the cooled pate. Add salt and pepper. Refrigerate until chilled.

Shape chilled pate into a football. Place pimiento strips across top to simulate laces.

Football may be refrigerated up to 5 hours. Or spoon pate into a crock or small bowls. May be refrigerated in a crock or bowl up to 2 days or frozen.

Before serving pate, bring to room temperature. Serve with assorted crackers or bread rounds.
