Sweet Potatoes and Apples
4 med sweet potatoes (1 1/2 lbs.) peeled
and cut in 1/4 in. slices
2 Granny Smith apples, pared, cored and
sliced into rings
1/2 c. dried cranberries
1/2 c. brown sugar, packed
3 tbsp butter
1/2 tsp cinnamon (or more)
Preheat oven to 350 degrees.
Arrange potatoes and apples in a buttered
casserole. Sprinkle with cranberries
and brown sugar. Combine melted butter and
cinnamon and pour over potatoes.
Cover dish w/foil and bake for about an
hour. Take the foil off the last 15 minutes
or so to let the potatoes brown a little.
