In 1968, when the world at large (parents & gym teacher) decided I was too heavy, I was introduced to the concept of salad. And by salad I mean iceberg lettuce and tomatoes OR a hollow tomato filled with cottage cheese on a bed of iceberg lettuce.

I quickly learned that SALAD = BOREDOM with a side of NO FLAVOR.

But since I was essentially eating water-filled cellulose with no nutritional value, I did lose weight.

Then I discovered the Pittsburgh Steak Salad. For the uninitiated, it’s thinly sliced beef steak, French fries, cheese cubes, croutons, olives and heavy Italian dressing. All on a bed of iceberg lettuce. It was heaven. So rather than a cheeseburger I’d ordered this because it was a Salad.

(For those who’d rather not do the math, I could eat TWO McDonalds cheeseburgers for the same calories as a Pittsburgh Steak Salad.)

For a long time afterwards, I avoided vegetables in general and salads in particular Then we moved to Albuquerque and I discovered guacamole. Who knew a vegetable could be tasty! Unfortunately, while it had lots of nutritional value, it also had lots of calories.

Then micro greens and new lettuces came onto the market and I finally found that a salad and vegetable can be both tasty AND nutritious. Now I’m learning to add plant-based proteins and it’s rather fun to reverse a dietary concept so late in life.

This restaurant has some lovely combinations:

ThOSE are gorgeous. This restaurant is in Asheville? Our culinary team here has finally been able to reopen eating in our dining venues and has totally revamped our informal bistro style restaurant. They have introduced "bowls" in the "grab and go" counter (as well as order on the menu) and they are similar to several of the ones on your menu and absolutely delicious. I am going to send this to our DGD (vegan at Chapel Hill) and other family members who will LOVE the combos and ideas. Thanks.

The bowl I particularly like here has roasted portobellos, roasted jerk sweet postatoes, quinoa, small diced pineapple and a sauce that has a little sweet sour taste and just a hint of "heat" at the end. Delicious.

So I went looking for Sweetgreen and was confused because they showed it in Charlotte but as a "Chopt" so I guess it is the "bowl" concept that google picks up on.
