In 1968, when the world at large (parents & gym teacher) decided I was too heavy, I was introduced to the concept of salad. And by salad I mean iceberg lettuce and tomatoes OR a hollow tomato filled with cottage cheese on a bed of iceberg lettuce.
I quickly learned that SALAD = BOREDOM with a side of NO FLAVOR.
But since I was essentially eating water-filled cellulose with no nutritional value, I did lose weight.
Then I discovered the Pittsburgh Steak Salad. For the uninitiated, it’s thinly sliced beef steak, French fries, cheese cubes, croutons, olives and heavy Italian dressing. All on a bed of iceberg lettuce. It was heaven. So rather than a cheeseburger I’d ordered this because it was a Salad.
(For those who’d rather not do the math, I could eat TWO McDonalds cheeseburgers for the same calories as a Pittsburgh Steak Salad.)
For a long time afterwards, I avoided vegetables in general and salads in particular Then we moved to Albuquerque and I discovered guacamole. Who knew a vegetable could be tasty! Unfortunately, while it had lots of nutritional value, it also had lots of calories.
Then micro greens and new lettuces came onto the market and I finally found that a salad and vegetable can be both tasty AND nutritious. Now I’m learning to add plant-based proteins and it’s rather fun to reverse a dietary concept so late in life.
