Served them with some Mexican Black Beans I'd had in the freezer which I baked with some grated Asiago on top (yum).

Then piles of fresh tomato, red onion, cilantro, guacomole, tomatillo salsa, and sour cream.

I did them "deconstructed" and just cut up the pack of corn tortillas and fried them and sprinkled with fleur de sel. So the plate was basically a big pile of "dip" for the fried tortilla chips.

Cocktail was a yummy grapefruit margarita: Cuervo Gold, Grand Marnier, freshly squeezed ruby red grapefruit, lime zest, crushed ice, blend.

Trader Joe dark chocolate florentines and ice cold whole milk for dessert.

It's a carb weekend in case you couldn't tell.

It's on the menu in the next day or two. I just did a Mimi's Sticky

Chicken so will use for that. Today was chicken enchiladas.

 
Just finished eating the Lime Pulled Chicken Tacos for our "Linner".

(That's lunch/dinner. We eat early and then snack if we need to later.)We liked it, we liked it alot and I would vote it goes into T&T. However, I somehow envisioned it creamier/saucier than it was. Since we decided to make tostadas I thought it was going to be to dry. The flavor was wonderful (although we didn't get any coconut taste) but I decided to melt in a couple of tbsp. cream cheese. It really pulled it together and gave the consistency that I thought it would be. I fried yellow corn tortillas until crisp and placed the chicken. Then we just topped with shredded lettuce, diced tomatoes and red onions, guacamole and sour cream. I will definitely make this again. Thanks Melissa!

 
We didn't finish all of the chicken mixture so we decided that it would

be great on a big green salad topped with the tomatoes, onion, guacamole and sour cream. I think a honey lime vinaigrette would be great and top with broken up tortilla chips.

Honey Lime Vinaigrette

Makes: almost 1 cup

Toss this dressing with salad greens for a refreshing tang of lime juice with a hint of sweetness from honey.

1/4 cup fresh lime juice
2 tablespoons honey
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup olive oil
1/4 cup canola oil

In a blender: Add everything except the 2 oils to the blender and mix until combined. With the blender running, add the oils in a thin stream through the hole in the blender lid. Blend until well mixed.

 
My recipe from a different source calls for a 2 lb rotisserie chicken. Most I've seen are larger

than that. The Costco birds are really big. Perhaps you had a larger chicken and more meat?

 
I actually weighed ours! It said "32 oz" but it weighted 30.5 oz.

I'm trying hard to be "honest" about how much food I'm eating.

 
Melissa, you have posted several recipes that your paper has given

that have been really good. I believe the poblano cream sauce for chicken was one of them. I think there have been more but can't think of any right now. I just know, they do put out some good recipes!
