This is a really quick and delicious recipe. I'm making again this weekend. I've linked to the original, but have included it here also with my notes. Enjoy!
20 Minute Creamy Sun Dried Tomato Chicken Pasta
Total Time: 25
Prep Time: 5
Cook Time: 20
Yield: 6 servings
Ingredients:
2 Boneless, skinless chicken breasts
Salt and Pepper
1/2 Pound Spaghetti Noodles
1/2 Cup Oil Packed Sun Dried Tomatoes
1 Tablespoon (less if you don’t love it) minced garlic
1 1/4 Cup Heavy Cream
2/3 Cup Fresh Grated Parmesan Cheese
1/3 Cup Shredded Mozzarella
1- Teaspoons Fresh Lemon Juice
1/4 Cup Chopped Basil, fresh or more to taste
Salt and Pepper to taste
Directions:
1.Heat a pot of water over high heat and season well with salt.
2.Once boiling, add the pasta and cook until al dente.
3.Meanwhile, in a skillet over high heat, add a drizzle of olive oil and season both sides of the chicken with salt and pepper.
4.Place the chicken in the pan once the oil is shimmering and immediately turn to low heat.
5.Turn the meat once it’s cooked halfway, about 5-7 minutes.
6.Cook through, about another 5-6 minutes.
7.Remove to a cutting board to rest.
8.To the same pan, add the sun dried tomatoes with a little of their oil and the garlic.
9.Turn the pan to medium and stir for about 30 seconds.
10.Turn the heat to medium high and quickly add the cream and cheeses.
11.Cook for about 3 minutes or until thickened and add return to a simmer at medium low heat, add remaining ingredients, seasoning to taste.
12.Slice the chicken and add it into the sauce along with the drained pasta.
13.Stir using tongs and serve immediately.
My Notes:
I make approximately 1-1/2 times the recipe to accommodate the fresh pasta I buy and to accommodate the number of people I serve. I think to say you would get 6 servings from this recipe is a bit optimistic. I guess it depends on how much pasta you eat. There is no way our bunch would get 6 servings from the recipe the way it is written!
Also, since I use fresh pasta, I don't start cooking it until closer to time for everything else to come together.
I use Parmesan Reggiano, fresh garlic and basil. Like with anything else, quality ingredients shine through.
