T&T crasin green salad for TG?

Hi,

I've been asked to bring a green salad for TG. Yes, why is it now that I'm a widow folks think I'm not domestic anymore?

So I've been asked to bring the worst "nobody will eat it cuz we're saving room for the good stuff" menu item. So I'd like it to be a really good one -- any t&t favs? I'd like to use crasins to give it a festive TG feel.

(Read the reviews for tips - some people suggest soaking the cranberries in less juice. etc....)

 
Oh cool, will have to try with pecans. I agree, this salad is usually gone in a flash

when I make it or take it places. I especially like it with my avocado and blue cheese additions. Lots of flavors going on.

 
Hey, thanks for the reminder...I'd forgotten about this recipe, in fact

our youngest son requested a green salad with Christmas dinner this year with cranberries in it. So he is getting it!

 
Yum, I just made this tonight. A winner! Thanks Karen and Pat.

Used crumbled Maytag blue, soaked the cranberries for a bit to soften, and used half the amount of fresh onion/garlic. (I think the whole amount would be fine, but I'm always wary of raw onions in salads.)

Made croutons using cranberry/walnut bread we already had. How fortuitous was that!

 
First time in my life going to someone else's house, Ang- how about you?

I am still making dressing, gravy and mashed potatoes- and, oh yes, baking a ham too. There will be 15 I think. Should be fun. The "new" me wants to enjoy the day instead of cleaning and fussing over everyone.

What are you doing? Got a houseful coming? I bet you do.

 
oh man, lucky people to be having your dressing. I could be happy with a big bowl of that alone.

Son and DIL and the 2 grandkiddies are coming tonight, so I will have fun cooking for a housefull instead of just for me, at least till Sunday. I want to make everything under the sun! I really have to control myself. David wants to make us a seafood "stew" on Saturday while the rest of us are at the Nutcracker matinee. I think I will print out the bouillabaise(sp) thread we had here a few weeks ago to give him some help. He just wants to wing it, but I think a recipe or 2 would be helpful. My red cabbage is already in the freezer smileys/smile.gif

 
Ang, I meant to tell you earlier...

I baked my pumpkin in the oven, in very big chunks, but I baked them cut-side up. I would suggest baking them cut-side down. Mine had sort of dry crust on them which I was able to remedy, but if you put the cut-side down, you should be okay. You are a good Grandma.

 
thanks Dawn! I will be baking them bright and early tomorrow am. good thing I have a small 12lb

turkey---it can bake much later in the day for just a few hours. Last time I checked the pumpkins were still nice and firm in the cool garage. I could always zap them in the microwave or steam the chunks, but I think baked would be a richer flavor.
