Tarte Tatin

I just picked up a recipe for tarte tatin from the Saveur site. Looks delicious, but what is caster sugar and what should I bake in (11 inches and round)?

 
Pam, I use a regular cast-iron skillet.. A cake pan would also work, but the heavier the better.

 
Agree with cast iron, but I've made this many times in regular skillets and straight-sided saute

pans as well, with no problem.

I think all the recipes I've used over the years use regular granulated sugar. Not sure why superfine is called for in this recipe.
