But the point is, see, I can't abide orange blossom water. There were times when I would actually got queasy walking around the neighborhood and finally realized it was the pervasive scent of seasonal native orange blossoms. I get the same nausea from rose water and lavender.
So I just left that part out and am perfectly happy with the results. My Kitchen. My Nose. My Rules.
Okay. Here's the recipe per the book. This is NOT what I used:
3/4 C roasted pistachio, chopped coarsely
1 C cooked bulgar
1 C dried apricots, cut
1 TBL + 3/4 tsp orange blossom water
juice from one lemon
zest and juice of one orange
3-4 sprigs parsley, coarsely chopped
3-4 sprigs mint, coarsely chopped
Generous 1 TBL olive oil
pinch of salt (only if you feel it is missing)

Now I used the pistachio, apricots, bulgar, orange segments from several small oranges plus zest plus juice, lots of mint, some parsley,, NO LEMON JUICE, NO OLIVE OIL, NO SALT, NO ORANGE BLOSSOM WATER!!!!
I'm quite happy right now, mint stuck to my teeth and all..
