Terrific brunch/breakfast dish for a crowd: Salvadorean Breakfast Cake

While I have not tried this recipe - these cakes are delicious! A co-worker's

mother makes them and he brings them to share with us. When he first asked me if I wanted to try a quesadilla, I was confused, since I pictured the Mexican style with tortilla and cheese.

 
Can you tell me more? Does she serve them plain, with sesame seeds on top? Warm or cold?

 
He always serves them to us at room temperature, and I've had both with and without seeds.

And always served plain, but he says sometimes they eat it with jam, butter, or crema.

 
Just took them out of the oven--they are fabulous! Thanks for posting!

Halved the recipe. I did sprinkle with sesame seeds, baking time took longer than recipe stated to get the tops browned. I used a small amt Splenda as DH can't have sugar. That may have affected the browning factor.

Really good. They are as "greasy" as posters stated.

I had with sliced peaches and DH ate with over-easy eggs.

 
Yes, they do look great! I made a very low-carb

breakfast the other day, very filling, 'didn't miss the carbs at all.

I sliced some zucchini from the garden, chunked some tomatoes from the garden, added DILL (edited, originally had basil), and butter, then poured 2 beaten eggs and Parmesan cheese over all. It was soooo good. Topped with a little sour cream and fresh chives.

Dawn, if you don't have the rice flour, try ground almonds. I have another similar recipe using just

almonds. So good!

 
Same here--chilled, they were pretty solidified-still good,but I liked the warm version better smileys/smile.gif
