then I used it inside "Australian Lamingtons" for my neighbor. A lamington is basically a sponge cake, split with jam inside, then the whole thing is dipped in thin chocolate icing and coated with desiccated coconut. Messy but it made my neighbor very happy to have memories of New South Wales. It was her favorite dessert there; she had given me a CWA (Country Women's Association) cookbook with a 1965 recipe in it. That recipe cuts the cake into 1.25" squares...so little petit fours. The attached recipe cuts much bigger pieces and would be easier to handle with the messy dipping and coating.

It made a nice treat for her, especially since she had no generator for her house and a 90-year mom on hospice. Mom wouldn't leave the house so I fed them desserts and dinner. Made three different butterscotch puddings. Not sure which one will make Mom happy.
