Thai Dipping Sauce. I was pretending I was interested in making something for dinner. I ended up with a sort of stir-fry. Not good at them anymore.

I threw out the rice I had precooked. So used a rice wrap, since I was feeling unmotivated again. So then I had a stir-fry in a rice wrap. That worked well. But I dug out my old dipping sauce recipe as it really is the best one I have ever had. I did not trust my fish sauce so put a little soy in instead. It's still a great sauce. Hah, obviously this recipe came from the restuarant where I ate it. My quantities are at the ends of the lines

Thai Vinaigrette (dipping sauce)

5 oz. Finely chopped lemon grass - 1 T.
1 c. lime juice - 2 T.
1 c. lemon juice - 2 T
3 c. water - 2 T
2 c. sugar - 1 T
2 c. fish sauce (nam pla) - 1 1/2 t. soy sauce
3 oz. Very finely diced jalapeno - a small pinch of dried peppers Pepperoncini
1 bunch chopped cilantro - 1/4 c.
1 bunch chopped mint - 1/8 c.
----------------------------------------- 1 t. minced ginger
----------------------------------------- 1/2 t. minced garlic

So I guess I didn't follow the recipe too closely. But I wanted to get the actual recipe out. My mini version worked very well also. It sure makes a boring dinner sing to me.
