Thank you for egg ideas. I went with frittata and it was a success. Next up: quiche.

It was good the first day but even better when I toasted some Sara Lee Artesano bread, added a molecular smear of mayo, fresh spinach leaves and warmed slices of the frittata. Who would have thought potatoes in a sandwich could taste so good.

I used par-boiled potatoes sautéed with onions, then added roasted red peppers, fresh spinach, cherry tomatoes, the egg mixture and topped off with cheddar and a bit of parmesan.

Here's another idea for another time- a pasta baked Fritatta

change it up- add veg, herbs, whatever- a great way to use up leftover pasta. A very long-time favorite at my house.

FRITTATA (serves 2)

3 cups cooked spaghetti (about 1/2 lb uncooked)
3 eggs, slightly beaten
2 T milk or cream
1 small chopped onion
1/3 cup parmesan cheese
1 tsp pepper
1/2 tsp salt
1 T oregano
dash cayenne pepper or chili powder
2 tsp butter
1 C picante sauce, warmed
Mix all together except for butter. Melt butter to very hot in 10” skillet. Add mix, spreading evenly to form tight cake. Turn down heat to medium-low, and heat until bottom is brown (about 10 minutes).
Divide in two. Turn each half with a spatula and brown the other side. Serve with picante sauce.

 
So again I'm confused. I thought a frittata was layered potato slices held together by

a little egg mixture? No?

I believe it was originally designed to use up stuff like potatoes, pasta, veg, etc. bound by eggs. How could any of it be bad?
