Thanks again to deb-in-MI for the marvelous Croissant Breakfast Casserole!!!

This is one of my all time favorites!I just finished putting this together. Well, kinda...

We have out of state guest to arrive noonish tomorrow and this will be breakfast the next am. I have placed the bottoms, topped with sauteed sage breakfast sausage, mushrooms, leeks and the cheese. Tomorrow night I'll just add the custard. LOVE this recipe. Soooo good. Thanks Deb.

I do have one hint for anyone making it... DON'T assume more cheese is better...

I added extra cheese this time and it just ran all over (never a bad thing, of course) but it just made for too much cheesy filling.

 
My exact comment too. We made two batches and loved it, except that we went a little

crazy with extra cheese and it was too soupy. But taste-wise it was great.

We made up a batch for Bachelor Bob and he was thrilled to get a hot casserole breakfast on Christmas morning.

We followed Dawn_MO advice and just used what we liked. Croissants, sauteed onion, mushrooms, celery (use the rest for stuffing), diced ham, montery jack and cheddar, then the top croissants. The tops ended up nice and crispy.

We baked the second casserole a bit longer. Definitely a keeper.
