Thanks again to Karen for the Tomato-Spinach Cauliflower Rice with Lemon recipe. I've made it...

Thanks for letting me know Michael, we are in love with it too, such a simple dish and yet

so beautiful and delicious. If you can find smoked sun-dried tomatoes, they are excellent with this dish, as well. I buy a brand called California Sun-Dried tomatoes, julienne cut. Safeway has it out here in No. CA

I'm using the oil-packed sun dried tomatoes from TJ's. I usually have a jar...

...on hand, as I use them for other recipes too.

I will look for the smoked version.

Thanks,

M

I've also made this dish and we loved it.

I used the same julienne cut sun-dried tomatoes and they worked nicely. I will look for the smoked ones.

I did not use any nuts the one time I made it. Perhaps next time, but I'd use plain rather than candied nuts. I may try pistachios.

These are dried smoked sun dried. They are very moist and pliable and wonderful

in salads, sandwiches, on baguette bread with cheese and a splash of vinaigrette, omelettes, combined with a sheet pan of roasted garlic, ane more

There are so many crunchy things on the market right now that would be fun to use in this dish

I am loving tiny round asiago cheese cracker type things, but more airy than a cracker and about the size of your little finger tip. I love them in my lunch salads. They would be fun in this dish too.

They come in one of those foil type packets like the smoked sun-dried tomatoes are in.

Made this and yes, it is a winner. I have one comment: the dried tomatoes need to be tasty

as they are the main star in the taste bud lineup. I used a mixture of bright red dried tomato strips and dark, DARK almost black halves. I love dried tomatoes and have taken to carrying them in my purse because my favorite sandwich shop stopped putting them on their sandwiches. To quote an employee "the manager said they are costing too much." Panera also stopped putting them on their eggwhite breakfast sandwich and started smearing on a fresh tomato slurry. It ruined the sandwich.

Anyway, I bought some at Trader Joes and some at Ingles and some at Whole Foods and then dumped them all together so now I don't know which is which. But in this recipe, the dark ones left a very bitter taste and slightly ruined those bites they were in. The bites with the bright red pieces were great. Maybe the fresh lemon enhanced its bitterness? Who knows...Other than that issue (which I can remedy), I'll be making this again.

I'll be ordering dried tomatoes from NUTS.com. They were the best I've ever tasted (other than the home-dried ones from a farm in NJ). They aren't in oil...just dried.
