I will be cooking this at my mom's house and leaving it here (they're having guests this weekend and I didn't want her to have to cook), so I won't be around to see the final result. I'll ask mom to let me know how it works out.

The tortillas may not hold up, but layered this way, it won't matter...

Nearly as much...rolled enchiladas do better if they aren't sauced. That's where the problem comes in. As soon as the enchiladas are sauced they start absorbing liquid like little sponges.

 
Since this is the casserole, I think it would freeze just fine. you want the tortillas to soften

in this casserole.

 
Hi Amanda, I thought there was some discussion awhile back about

corn tortillas not freezing well, but I don't know for sure. I searched and couldn't find the string. Maybe someone else will chirp in. I know I have frozen the flour tortillas with no problem, both semi-cooked and raw so to speak. Not for any length of time, usually just a couple of weeks before I am going to serve them.
