...batch to our fellowship meeting on Monday night. I used 8 cups of chicken meat from two Costco rotisserie chickens and served it with trimmed romaine lettuce leaves. I filled some of the romaine with salad and spread them on a platter with a nice hand-made ceramic bowl of salad in the middle. I scattered a few bright red cherry tomatoes around for garnish.

The group took care of business. None left, and several requests for the recipe.

Spicy Chicken Salad

Poultry Salads

Amount Measure Ingredient -- Preparation Method

1 cup good quality mayonnaise4 cups cooked cut-up chicken breast

1/4 cup celery -- chopped fine

1/4 cup red onion -- chopped finely

1/4 cup fresh cilantro leaves -- chopped

1/4 cup nacho sliced jalapenos, chopped -- or to taste

salt and black pepper -- to taste

In a medium mixing bowl, mix all ingredients together except the chicken. Gently fold the chicken into the mayonnaise mixture until well combined. Transfer to your serving bowl, cover with plastic wrap and refrigerate, to allow flavors to meld.

I'll check. It's almost the same thing...the #10 tuna is very solid from

being processed directly in the can, so pieces are nice clean chunks...not the mushy stuff found in little 6 oz cans.

 
This sounds great. Not familiar with the term, nacho jalapenos? Are they jared?

I've seen the pickled, tame jalepenos, and use them in many things.

 
They are jarred or canned, and are simply pickled jalapenos that are sliced into rings.

The pickling process adds a bit of tang to the salad, I think. I've made the salad with chopped fresh jalapenos, but it needed a dash of vinegar to approximate the nacho sliced jalapenos.

Coupled with work accounts and personal accounts and boards like this, I'm finding it hard to keep up. We've now got three grandchildren.

New Grands! Yay! We were just listening to her talking about her kids. Time does fly.

 
Hi All! Everything is fine here, I just haven't been in the cooking mood lately.

I am still struggling with stomach issues from the blood thinner I was on. It is getting better though. I just mostly crave Honeycrisp apples and other fruit.
I do have a new little great granddaughter, Salem. I forgot how little they are when newborn.
I am also trying to ready myself for my youngest son to go off to college. It will be a true empty nest and I am not particularly happy about it. I am not sure yet, but I think my son will be going to UNY Rochester. I keep telling him the West Coast has good schools and it is so much warmer there!!!
Now if only my granddaughter would stop putting those big huge bows in my little peanut's hair, I would be so happy. I will try to stop by more often, especially when I have a new recipe. Have a great weekend!

on your grandbaby and soon-to-be empty nest. The fact that your son is comfortable going far away is a huge bonus towards both of your futures smileys/wink.gif Most graduate college possessing/developing skills necessary to problem-solve living on their own and transition from college to career without a stop back home. Truly better for both than the score of young adults "not working" (where not working = no longer looking for a job). As a retirement coach I ask empty nesters to identifying all of the things they have always dreamed of doing but haven't had a chance to pursue - yet - due to work, children, financial, location, etc. This planning process definitely helped DH and I embrace and control the ever transitioning adventure ahead. Hoping that your stomach issues will resolve and you will continue to feel better and better. Colleen

 
Hi Dawn! Hope you see this... When our youngest applied to his college choices, two thirds of...

...the schools were west coast schools. The other third were Ivy's.

If no Ivy's accepted him, he was happy to stay warm and go to school in familiar territory. When Princeton accepted him, that all changed.

He's a sophomore there now, and he's learned how to effectively deal with snow, ice, sleet, etc. And the academic rigors of an Ivy League education.

Congrats! I know how hard these kids try.

He ended up choosing Rice. He and Bub are going down for an orientation at the end of the month. I am so happy he will be in a warm climate!
