Mini-tweakette: I served it the way they do in our Thai restaurant. Rather than wrap in a lettuce leaf, I tossed the seasoned dressed chicken directly with a full head of shredded romaine lettuce, sliced cucumbers, sliced carrots and diced water chestnuts.

Next batch: I'm going to add some fresh lemongrass and tamarind water, now that I know how to make tamarind water.

while we love laarb and eat it at least once/week. It is messy. I had started just putting the laarb on my plate and eating the lettuce leaf with it as you would a slice of bread.

Yours is a great solution.

 
Glad you tried it, Marilyn- I think the cold version is Laap or Laab as served in

restaurants I have been to and it is more like a salad- the hot version wrapped in leaves is Laarb or Larb- but I am not an expert and it is really messy as Richard says. I like your tweaks, Marilyn- especially using lemongrass. Serving it like a salad is a great solution to the mess problem.

I was just in L.A. and made a Laarb dinner for six one night. It was big fun and I loved seeing everyone passing all the condiments around, interacting with each other and the food- like Thai tacos sort of. I made the coconut cilantro rice, green beans sauteed in a little oil with lemon and chopped parsley, green papaya salad (except I could not find green papayas so had to use cuke and it was fine.) I served Trader Joes Thai chili lime peanuts as a small appetizer and a good time was had by all!
