RECIPE: Thanks to Pat_BastropTX for the book & this recipe: Nacho Popcorn

10-12 cups popped corn (I like Orville Redddinnnbaockerrrr's White Kernel).

1 tsp chili powder (I use the San Antonio mix that Pat sent from Central Market)

1 tsp ground cumin

1 tsp paprika

1/2 tsp salt

4 TBL melted unsalted butter (I used 2 TBL)

a bunch of freshly grated parmesan cheese.

Popcorn: I haven't a clue about amounts. I used a non-stick dutch oven, drizzle about 2 TBL of veggie oil, put in 1-2 kernels, heat at mid-high temp and cover the pot with a large screen. When those singular kernels pop, I dump in enough kernels to cover the bottom completely, swirl to coat, then keep the pop moving while the kernels go crazy performing their Prime Directive in Life. Takes about 1 minute to pop the entire batch once the oil is hot.

Have a large bowl ready. Pour in half of the hot popcorn, drizzle with half the butter, sprinkle with half the spices, sprinkle with cheese. Repeat. Mix with hands to blend.
