basil. Finally made it last night...and I'm eating it cold for breakfast!

Cutting the meat off the boned thighs was a pain, but I think dark meat holds up better under the heat than breasts would.

I originally thought 1 cup of basil would overwhelm the taste, so I used 1/2 cup. Took one bite of the finished product and immediately added the other 1/2 C. This basil has a soft anise-y flavor and goes well with the sweet soy.

(By the way, if you can't find sweet soy, dissolve 2 parts palm sugar (or jiggery) with 1 part soy sauce. If you can't find jiggery: add 2 parts brown sugar moistened with maple syrup with 1 part soy sauce. If you can't find brown sugar, then God Bless You. I found mine at the health food store (Thai food section) and at the Oriental market.)

Fearful it would smell/taste fishy and be too spicy, I chickened out and only used 1 Tbl of fish sauce, way fewer chilies, 3 garlic cloves and 8 small shallots. (Can you tell I was having an angst-driven night?)

This would be good wrapped in lettuce leaves and the only thing I would add next time would be lots of veggies to reduce the calories per serving.
