I usually make this a few times every summer and forgot about it this year

It is in the oven right now. Love these roasted veggies.

so yummy. Maria , next time you make these, try adding fresh lemon wedges, they get all caramelized and yummy. Very delicious! Thanks for the reminder I needed to make this dish.
