that's great :) re: the last minute 'cancellers'.............

that's my biggest pet peave about doing the classes. i often have wait lists for my classes, because i just can't accomodate more than 12-ish at a time........and yes, often friends of 2 or more book together, and then sometimes cancel together, hours before the class. of course, people on teh wait list can rarely attend on such short notice. i don't charge in advance for my classes, or take a non-refundable deposit, as some others in our city do, but it gets tempting to do so! I have a minimum number of 6 to run a class, and I've always bought all the supplies the day before, or at least teh day of, the class, so I've had more than one occasion where I've been forced to run the class with less than the minimum #, or stuck with spending way more of food supplies than I needed to, because of these last minute cancellers, or worse-yet, no shows. The no-shows are def. the worst - especially since I call the day before as a reminder.

One thing I've done with one of the community ass'ns I teach through (most of my classes are run in my commercial kitchen), is that they pay me for a min. of 7, even if there are a bunch of no-shows (which seems to happen more with community ass'n classes.......even with the phone reminder a day before, for some reason)

That's great!Hope you do more of the same. If you were here in my area, I would

certainly sign up! One thing you might do is contact the wait list and ask each one if they would mind being called at the last minute. You would be surprised at the willingness of some to be able to be flexible.
