I can post recipes if anyone wants them. The Herb Roasted Pork Roast was my favorite. Thanks Amanda for suggesting it. I was also going to make the veggie sandwiches that Cyn posted, but failed to notice the 24 hour chilling factor. I will definitely be trying those soon.

Edited to say: thanks everyone for all the recipes, suggestsions and tips!

It was a wonderful shower and everyone had such a nice time. The food was good, if I say so myself.

Here is what was on the menu:

Tuscan Cheese Spread w/ crackers

Herb-Roasted Pork Tenderloin (this was fantastic, I found that it only took 30 minutes to roast for me, it might have been the size of the roasts)

Spiral Sliced Ham w/Orange Glaze (orange zest, mustard and brown sugar basted on after the ham was almost done, and then I broiled the glaze).

Ribbon Sandwiches (the way I read the recipe was that there were two slices of bread to each sandwich with the cream cheese on top. I added another layer of bread so they would be neater. I alternated whole wheat with white bread.)

Whole Wheat rolls and some kind of dark brown crusty rolls, not sure what they were.

Horseradish Sauce

Curry Mustard

Mayo

Pineapple Chutney

Broccoli Salad

Crunchy Pea Salad

Fruit Pizza

Well done! I'm amazed at what you did on such a tight budget. How is your stepdaugjter?

The menu sounds great, Dawn. Can't believe you did it on that amount. Could you post the recipe

for the Herb-Roasted Pork Tenderloin and also the curry mustard. TIA

It was co-ed, but we only played one game, thankfully, and that was

to guess how many malted milk balls were in a giant baby bottle.

Thanks, Joe, I already had the ham and pork tenderloins in the freezer

so that helped a lot. My stepdaughter is doing great. She has 6 weeks maternity leave and for the first time in a very long time, gets to spend the summer with her kidlets.
Proud new parents are back home with their family, who never expected a grandchild. Modern medicine, quite the miracle.

Thanks, Elenor. Amanda posted the pork tenderloin recipe below

and the curry mustard isn't really a recipe. I just used the brown mustard I had and mixed in curry powder, ginger, brown sugar and a little cider vinegar, to taste. Sorry, I should get in the habit of writing my recipes down, especially now that I am selling them. I will see if I can come with some approximate amounts for you.

I loved the pork tenderloin and it was so easy and can be made a day ahead.

I forgot to add the oil to the recipe, so after I sliced it and put it in a zip loc, I added the pan juices and a little olive oil to coat the slices and they were delish! Thanks for the great recipe.

Thanks barb, you need to give that pork tenderloin recipe a try.. I would like to see it T&T.
