The B-day party was so much fun. And the eggplant dishes was a hit

This is what I did. Grilled the eggplant with the herbs and oil. Greased the casserole dish,(I used a oval dish )

on bottom about 2/3 C spagetti sauce then eggplant, mozz used bagged, parm. About 1/2 c mozz and 1/3 c parm.

Then eggplant 1/2 c sauce add cheeses 1/2 c mozz and 1/3 c parm.

Then eggplant, cheeses and chopped basil 2Tbsp

Next eggplant, sauce, parm and a few basil on top. I did not cook ahead I let it sit in ref for about 4 hrs and cooked for about 1 hr. Turned out great.

I wasn't crazy about it but Ed loved it. I'll package it up in single servings and freeze for him.

I love Eggplant Parm. but maybe I just love the breading on eggplant parm.
