I cook every day as a rule- and work full time. I'm working at home now which is a lot like being retired with something to do.....I am truly loving having extra time to cook and bake. I fell off the all-healthy food wagon when this COVID-19 mess started and have been leaning back on my old favorites. I'm not going to post all the recipes but if there is something you want I will post. Here is what has been on the table at my house (my Husband loves dinner time)- let me know what you have been cooking:

Corn and Potato Chowder

You have been a busy girl! I would love to see Abby Mandel's oven fried chicken recipe when you

have time. I did a search on line and here and didn't come up with it. Have been thinking about making some oven-fried chicken if I'm not too lazy to defrost and cut up the chicken.

 
I've also been cooking and having fun working with what I have in the freezer, pantry supplemented

with quite a bit of fresh produce and dairy. Like you, much of it is what I've made in the past but a few were new to us. Here are some of the things I can remember. No desserts except for an apple crisp to use up some apples.

Pork Roast with Fennel and Apples
Green Chile Stew from above leftovers
Chicken Curry with Cashews
Sausage with Potatoes, Peppers and Onions
Pasta Primavera
Grilled Lamb Chops
Lasagna Rolls
Pasta with shrimp, artichoke hearts and feta.
Chicken-stuffed poblanos
Chermoula barramundi with yogurt sauce
Italian Flag Pasta
Neapolitan Meatballs and tomato sauce from Milk Street
Stuffed pork chops that are usually stuffed with bread, fresh mushroom and blue cheese for which I had to sub rehydrated dried mushrooms and Asiago
Pork hash with avocado and poached eggs
Sweet and spicy spareribs with Korean bbq sauce
Posole with Rancho Gordo dried hominy, pork and Hatch chiles
Ham and spinach bread pudding
Sea Scallop and leek pasta

 
The posole recipe was posted here by Mark in Houston, originally from Richard in Cincy who got it

from Feast of Santa Fe Cookbook. My copy was the original from the cookbook and I used a bit less cloves and cayenne as did that recipe. I had a half lb more of pork butt and used 4 cups of cooked posole. It is a really good recipe, I highly recommend it. Will be having leftovers this evening with some flour tortillas.
