Toasted sesame bagels, cream cheese and smoked salmon for breakfast with cream tea.

Ham and cheddar crustless quiche for the week's breakfasts.

Roasted free range roasting chicken stuffed with lemon and oregano to use for week night dinners

Beef, Red Pepper, and Mushroom Stew for week night dinners.

Dressed Eggs. Lunchbox snacks.

Spinach Ranch Dip and crudites for lunchbox snacks.

Thai Green Papaya Salad

1 gallon of pineapple tequila (added honey and lime to this batch, can't wait to try it!)

1/2 gallon of German Lemon Balsam Liqueur (Melissengeist--and old mediveal monastery recipe).

And for tonight's dinner, getting ready to hand batter cod (Alton Brown's beer battered Fish and Chips--Excellent!), hand cut chips, and the deep fat fryer is on duty for Fish and Chips with malt vinegar for the tonight's British telly viewing.

Melissengeist for Melissa!

Indications/Effects: Lemon Balm is antispasmodic and calming.

Fermentation Time: 5-10 weeks

Ingredients
4 handfulls of Lemon Balm Leaves (Melissen)
1 handful of mint leaves
2 washed oranges
3 washed lemons
1 tablespoon each of: anise seeds, fennel seeds, and caraway seeds
250 ml of schnapps (clear distilled fruit brandy from pear, grape, or plum, i.e. "Sliwowitz" or use vodka)
400 g Sugar
100 g. raw unfiltered honey

Rinse the lemon balm leaves and mint, shake them dry, and pluck off the stems. Mix with the peels of lemon and oranges in a large container with a lid (large gallon pickle jars work great). Add the seeds and pour the schnapps over to cover, top up with more schnapps if needed.

Set aside at room temperature for 5-10 weeks.

When it is ready, add the sugar to 400 g. water and bring to a boil until sugar is dissolved. Stir in the honey to dissolve. Set aside to cool to room temperature.

Add the cooled syrup to the jar, close, and shake well to blend.

Strain the liquid from the solids. Filter and bottle. Store in the refrigerator for 2-4 weeks before using.

Interesting facts: Lemon balm originates in the easter Mediterranean/west Asian region. It has been used since antiquity by the Greeks, Romans, Egyptians, and others as a medicinal and healing plant.

 
Absolutely! We take ocassional weekend breaks

and have a few old favorites. Like that sesame bagel with cream cheese and smoked salmon for breakfast. Then we're back on the low carb bus come Monday morning.

 
You can cut the sugar back to taste...

The recipe is a sweet cordial type liqueur for sipping after dinner or taking a spoonful of when you have a cold and cough.

 
dh was reading this book on vacation Gregg Allman "Cross I bear". He said it was intersting

how they came up with the name Melissa. Something about wanting it to be 3 sylables. I think he heard someone shout out Melissa in a supermarket and he knew that was the name to use. I am completely paraphrasing or making it up based on what dh told me... but it was something like that. We were laughing saying that he could not use Bar-bar-a

dh has been enjoying the book..... Lots of "behind the scenes" insight of the life and times.....
