The eggplant is beautiful this year. Just made 8 small loaf pans of parmesan.

The eggplant has been dipped and browned. Can't remember whether to freeze baked or unbaked. The internet offers conflicting arguments

 
I assume in some sauce and cheese. I would do it unbaked which is what I do with

lasagna and moussaka.

 
ah, didn't realize you were looking for what you had done before. ;o)

I like to bake them fresh, but in your case, if you wanted you could do some ready to reheat and some to bake.
