I cooked Ron in Worcester's Roast Pork Tenderloin and served with mashed potatoes, carmelized onions and apples, and something called buttercup squash, which seems to be a cross between blue hubbard and acorn. Also baked the Pear and Walnut Cake (without the walnuts). I couldn't find any ripe Bartlett Pears, so I used canned, which seemed to work fine. I think I will increase the spices the next time.

I brought a package corn bread from Wegman's, but I forgot to store it in the fridge and it was covered in mold spots, so had to go with regular rolls. That'll larn me--next time I'll MAKE the cornbread!

So here's the menu:

Roasted Pork Tenderloin

Carmelized Onions and Apples

Mashed Potatoes

Buttercup Squash

Salad (supplied by one of the guests)

Rolls, butter

Pear and Walnut Cake

 
could you please post the link to the pork tenderloin recipe.

I have out of town guests arriving on Friday and may need to double dinner on short notice. Pork tenderloin may fit the bill.

Your menu sounds delicious.

I don't think Wegmans uses any (or at least many) preservatives in

their baking or in their store brands. That's what makes them special ;o) Their cornbread IS good and I like how they package the squares in little cellophane bags - 'sorry yours went back so quickly :eek:(

 
Here you go: Herb-Roasted Pork Tenderloin

Notes about the menu:

I carmelized the onions and apples as the pork roasted. In my oven, the time was a little short but it was perfect in my Dad's oven.

I boiled small, red potatoes and mashed them, skins and all. We steamed the squash, then mashed that. We did all this ahead of time, then reheated them in the microwave.

An aside: my parents have this tiny, funky '50s kitchen. There are two cook top elements each with two burners that pull down from the wall and rest on the counter. (The oven is a separate unit.) But if you pull them both down, you lose all your counter space, so I try to cook things in shifts so that I can reheat them in the microwave. I needed two burners for the onions and apples because there wasn't a big enough skillet to do them both at once. I don't know how my mother managed in this kitchen for almost 20 years.

Anyhoo...

If you want a green vegetable other than salad, I'd do something like green beans. But the salad was nice and fresh with all the cooked stuff.

I served whipped cream with the pear cake, but I think ice cream would be better. Perhaps Butter Pecan for a more autumnal flavor.

I used this marinade on a pork loin and it worked out very well. The pork was marinated for

24 hours. I boiled the marinade for 5 minutes and then added some mustard and a bit of white wine to make a sauce. Yum!
