suggestions...I had trouble with the server just when I needed it most BUT I did do the spicy shrimp tapas along the lines I thought I remembered before I lost the contact. Joe, they were delish. I just did not use the exact quantities you gave.

Forever Roast Menu.....

Jolly Roger's cocktail

Joe's Spicy Shrimp tapas
Warmed small Blini with taramasalata spread and salmon spread

Wild Mushroom soup served with baguette halves toasted, raw garlic and evoo

Forever Roasted Pork Shoulder
Garlic sweetpotato mash
Roasted Pear and Arugula salad

Rumptopff with vanilla ice cream and mint chocolate cigars.

I had a cocktail before hand as there were a few calamities ....poured me'self a 'Jolly Roger'...

Cocktails:
A good measure of Mount Gay Rum in a tall glass
Bottle of Ginger Beer
Dash or two of Angostura Bitters
Ice cubes

Feeling Relaxed enough I proceeded with the meal.
Time to flake the shoulder (I fretted the shoulder I had would not give us enough meat so did 2 tenderloins, wrapped in parchment with plenty if juice and evoo,which I knew would be drier but I thought there would be more gravy)
Gee, very little if any gravy and the tenderloins were dreadfully dry to my mind...


AND the computor went offline as I was looking at Joe's recipe....OH NO
Soon the guests will arrive

Time for a 2nd "Jolly Roger"
Ahhh, easier now I flaked the meat. Mixed all the meat together and poured what little gravy there was over it all.....and set about doing the shrimp as I remembered....

Pouring off the hot water to mash the sweet potato I get a call to say that my sister is a Grand Mum for the first time....
Time to celebrate...

The 3rd cocktail was the answer but I caught myself thinking I would like a "Rolly Codger" so decided to wait a bit longer......

Toasted the walnuts for the salad and burnt them as DH was getting me to drop everything to flush the loo's....some problem with the pipe and guests arriving and...well, who cares I danced between the bathrooms and the kitchen and burnt the walnuts.....
Definately time for a "Rolly Codger"

Set about putting the salad together and calling one of the guests to see if by chance she had some walnuts to spare...she did and would bring them over...CHEERS!!! I'll drink to that.....

I had used Bosc pears pre-skinned and cut into 8 slices and layered a single layer on a sheet pan, drizzled with evoo and lightly salted and peppered and roasted them in the oven...they did not go caramel-like so added a sprinkling of sugar and a dash of port
No Marg... I did not have a wee drop I was still Codgering the old Rolly......Ohhh, Yum and then put them under the grill...Very good.

Set these aside and when ready to plate put them atop
Arugula, MIZUNA, romaine and radiccio pieces.
And the newly done caramel walnuts....VERY, VERY good
For dressing:
1 tablespoon finely chopped shallot
2 1/2 tablespoons cider vinegar
1/2 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup plus 1 tablespoon extra-virgin olive oil

Guests arrive and time for a cocktail..."Lolly Dodgers" all round?
The shrimp were absolutely the answer for the cocktails, thanks Joe.

Always satisfying, second helpings of the soup and the main course for 6 of the guests!!!! The meat turned out just superbly.......

I felt I would be Dodging Lolly if I had another cocktail so moved onto the wine with the meal.

I must mention a part of the conversation here...well, one good (and true) story.

All 8 of us have been lucky enough to travel through Africa in one way or another, met up with wild beasties, had some close shaves and would love to go back.

Re-telling stories is the best and one hears so many BUT this story was a new one to me and had us in hysterics.....

Our friend was for some reason needing to go some 300 kilometers from where he had left his wife and young daughter and get to the airport...in doing so he needed to get through a game reserve. Now he was a cyclist of note in his country some years ago and still keeping up with cycling decided to get a bicycle and head off into the bush....back-pack on his back.

Shortly after setting off the pedal broke and he was lucky enough to get a lift to the next town where he had it fixed.

He decided to cut the journey short by heading through the reserve and duly did this "illegal" thing, he had no gun with him, just some water and some sticks of biltong (a type of jerky made from game)!!......about half way in a game warden met up with this (mad!) lone cyclist whom he stopped.
Getting out of his truck he approached our friend who had got off his bicycle and stepped away.
A conversation ensued where he was told off about doing this unauthorised thing but while this was happening our friend suddenly caught sight of an elephant approaching....

Now some of you may not realise that elephants move very quietly for their size and this one was almost on top of them...The warden, seeing the dropped and open mouth of our friend, looked over his shoulder and without a second thought made for a culvert behind our friend as his truck was towards the elephant.
Our friend, thinking that was a wise thing to do also made a dive into the culvert.

Here the two men got quite pally after 2 hours wait and sharing the water and biltong!....when they ventured out they found no elephant but a bicycle that had it's wheel totally mashed up as the elephant had stood on it.

The now friendly warden helped put the bicycle into the truck and drove our friend to the post nearest the airport.
He was in time for the flight but decided on the return journey not to cycle!

 
What great stories. I'm glad the meal was a success. Those shrimp have never let me down,

and I never measure anymore anyway.

I think this menu belongs in the Menu section.
