RECIPE: The joy of simple-- REC: Blancmange (Vanilla Custard Pudding)

Feeling out of sorts and wanting something simple, easy on the stomach, and comforting, and I just happened to open the "Joy of Cooking" to this. I hadn't made scratch vanilla pudding in years. It is so good and such a simple pleasure.

Mix in top of double boiler:

1/2 cup sugar

6 tbls. cornstarch

1/4 tsp. salt.

Gradually add while stirring well:

4 cups milk

Place the mixture over, not in, boiling water and stir constantly until begins to thicken. Cover and continue to cook for about 10 minutes more. Stir 1 cup of this thickened mixture slowly into:

2 beaten eggs

Return to the pan, continue cooking 2 minutes, stiirring constantly. Do not overcook. Pudding will thicken as it cools. Remove from heat and when slightly cooled by gentle stirring to release the steam, add:

1 teaspoon vanilla extract

Pour into molds.

Yum, love stuff like this. I made tapioca pudding the other night and had forgotten how yummy and basic it was.

 
Richard, did your grandma make you Rote Grutze will vanilla sauce?

(Umlaut over the u) It was a red berry type pudding served with a vanilla sauce. I think of this when I'm feeling poorly and want some comfort food. I think Oetker's has packets to make this.

 
No, we never had the rote grutze

we just had sugared berries with puddings and pound cakes. I know it's a very famous German dessert and you know what? I've never tried it! Even when I've encountered it on the menu and I'm ordering dessert, my eyes will always wander off to the tortes and strudels ; )

I just love this recipe. So simple and the wonderful rich eggy vanilla custard is a taste we don't have much of these days.

My grandmother also used to do the big tapioca pudding with the egg custard base that tasted very similar to this.
