Today Geoffrey Zakarian put a tortilla into a coffee mug, standing on its side. He then put the coffee mug in the microwave, laying on its side and zapped for 1 1/2 minutes. Then he made a taco. The taco was crispy.
I had to try it. I used a corn tortilla....my first one was over crisped, second one at 1 minute came out perfectly crisp. In the meantime I heated a can of re-fried beans, mixed with chili peppers, taco sauce and garlic powder. I put a lettuce leaf in the taco, then the beans, then shredded cheese and topped with halved cherry tomatoes. I had lunch in no time and a crispy taco.
Granted, the taco was not as perfect as when it is fried in vegetable oil, but it was quick, no mess and tasted great. Great idea. Trying a flour tortilla next time to see if it holds up to the filling.
