The local paper ran this today...(Baked) Coconut Shrimp with Dipping Sauce

Last year DH was in Saipan for 4 1/2 months and loved the coconut shrimp

so much that he got the chef to write down the recipe for me. It is exactly the same as this and is delicious.

 
This looks nice. I've avoided cocnut shrimp that is fried because the coconut usually

ends up tasting burned. This looks like it would solve that issue.
