The Lundberg rice co. sent me many basmati rice recipes. Is there enough interest for me to share?

There's a bunch of recipes they sent; I won't share them all at once....here goes, the first one...

These first 6 are summer salads...FYI, here is a side hint for rice salads:

HOT TIPS FOR PERFECT RICE

1. The correct water to rice ratio is critical to having your rice turn out perfect every time.

2. Prepare rice the day before using 1 cup rice to 2 cups water. Refrigerate overnight.

3. If you are planning to serve a rice salad the same day that you prepare it, use 1 cup rice to 1-3/4 cups water. This creates a firmer grain.

WILD SUMMER SALAD

1 c uncooked Lundberg Wild Blend rice cooked accord. to pkg directions
1 c cooked oneless chicken breast, cubed
1 med tomato, seeded and diced (3/4 c)
1 bunch green onions, choped (3/4 c)
1/3 c cooked green peas
4 tbsp rice vinegar
1 tbsp sesame oil
1 clove garlic, minced
1/2 tsp dried tarragon
1/2 tsp salt
1/2 tsp black pepper

Combine cooked, cooled rice with all ingredients. Toss lightly. Chill and serve. Makes 5 cups.

 
2nd salad rec Southwestern Rice Salad

1 c uncooked Lundberg Black Japonica rice, cooked accord. to pkg directions.
1 can (8.25 oz) corn, drained or 1 c fresh or frozen
1 can (15 oz) black beans, rinsed (1-1/4 c)
1 can (12 oz) mild salsa (1-1/4 c)
1 large tomato, seeded and diced (1 c)
1 bunch green onions, diced (3/4 c)
1 ea green and red bell pepper, seeded and diced
1 can(2.25oz) sliced black olives, drained (1/4 c)
2 tsp cumin powder
1/4 c fresh cilantro, chopped (opt)
2 cloves garlic, minced
2 tbsp lime juice

Combine cooked, cooled rice with all ingredients. Toss lightly. Chill and serve. Makes 8 cups.

 
Mediterranean Rice Salac

1 c uncooked Lundberg Wehani rice, cooked accord. to pkg. directions
2 tbsp olive oil
1-2 tbsp lemon juice
1-2 tbsp balsamic vinegar
1 or 2 cloves garlic, minced
1/2 c julienned sun dried tomatoes
1 can (2.25 oz) sliced olives, drained (1/4 c)
1/4 c grated Parmesan cheese
1/2 tsp salt (opt)
1/2 tsp dried rosemary, crushed
1 tbsp fresh basil, minced
1/2 tsp ground black pepper

Place hot rice in lg bowl. Combine oil, lemon juice, vinegar, garlic, salt, rosemary, and pepper in small jar or blender. Shake or blend well and pour over rice. Toss lightly. Cover and let cool. Add remain. ingreds. Serve at room temp. or chilled. Makes 6 cups.

Optional ingredients:

1 ea red and green ell pepper, seeded and finely chopped
1/2 c carrots, diced small
1 med. tomato, seeded and finly chopped
1 jar of pickled artichoke hearts, chopped
1/2 jar of capers

 
Coolin Country Wild Rice Salad

1 c uncooked Lundberg Counrywild rice cooked accord. to pkg directions
1 ea red and green bell pepper, seeded and diced
1 cn (2.25 oz) sliced black olives, drained (1/4 c)
1 stalk celery finely chopped (1-1/4 c)
4 green onions, finely chopped (1-1/4 c)
2 can (6 oz) crabmeat, drained and flaked (1 c)
2 tbsp lemon juice
1 tsp curry powder
1/2 c nonfat or lowfat mayo

Combine cooked, cooled rice and all ingredients. Toss lightly. Chill. Serve on a bed of lettuce and garnish with bell pepper slivers and olives. Makes 6 cups

 
July Jubilee Rice Salad

1 c uncooked Lundberg Jubilee rice, cooked accord to pkg directions
1/4 c bottled lowfat Italian vinaigrette (or 3 tbsp olive oil and 2 tsp wine vinegar)
1/2 c parsley, minced
1 large tomato, seeded and diced (1 c)
2 stalks celery, diced (1 cup)
1 tbsp fresh basil, chopped (or 1 tsp dry)
salt and pepper to taste
1 bunch green onions, minced (3/4 cup)
4 oz cheddar cheese cut into small cubes
1 can (2.25 oz) sliced olives, drained (1/4 c)

add vinaigrette, salt and pepper to cooked, cooled rice. Toss lightly. Add remainder of ingredients and toss. If desired, add more vinaigrette to taste. Chill. Serve on a bed of lettuce and garnish with parsley. Makes 6 cups

 
Summer Salad Royale

1 c uncooked Lundberg Royal rice cooked accord. to pkg directions
4 green onions, chopped (1/4 c)
1 c fresh, cooked, cleaned small shrimp or 2 cans (6 oz) shrimp, drained
1 tsp grated ginger or 1/4 tsp powdered ginger
1/2 tsp dill weed
1 cucumber, seeded and finely chopped (1 c)
2 tbsp fresh lemon juice and zest of lemon
1/2 tsp salt
1/s cup nonfat yogurt
1 small jar chopped pimento
1 tsp toasted sesame seeds
1 tbsp sesame oil (opt)

Combine cooked, cooled rice with all ingredients. Toss lightly. Chill. Serve on a bed of lettuce and garnish with sesame seeds. Makes 5 cups

 
Rice Apple Crisp

2 c cooked Lundberg short grain brown rice
6 lg cooking apples
1 c sugar
1 tbsp lemon juice
1/4 c Lundberg Sweet Dreams brown rice syrup
1/2 tsp cinnamon
1/4 tsp salt
3/4 c Lundberg brown rice flour
1-1/2 c. uncooked oats
1 c brown sugar
6 tbsp butter
1/2 c chopped almonds or walnuts

Stir tog. the rice, apples, sugar, lemon juice and rice syrup. Pour into a 9 x 13 pan coated with butter. In a small bowl, mix cinnamon, salt, flour, oats, brown sugar and cut in butter until crumbly. Sprinkle over rice-apple mixture. Bake at 350 for 30 mins. or until golden, brown and bubbly. Serves 10

 
Elegant and Creamy Peach Pudding

3 c cooked Lundberg short grain brown rice
3 c milk
1/4 c sugar
1 tsp vanilla
1/4 c Lundberg Sweet Dreams brown rice syrup
2 tbsp butter
2 tsp lemon juice
1 tsp grated lemon peel
1/2 tsp ground nutmeg
1/8 tsp salt
2 c sliced fresh peaches

Combine rice, milk and sugar in a 3qt saucepan. Cook over medium heat until thick, stirring often (approx. 25 minutes). Add vanilla. Pour into a 4 qt serving bowl. Heat syrup, butter, lemon juice/peel, nutmeg and salt. Stir in peaches and cook on low for 10 minutes. Spoon over rice pudding. Serve warm or cold. Serves 10

 
Randi, I know about their website; When I called about the basmati rice recipe, she said they

didn't have that recipe any more; but that she'd send me pamphlets and a cookbook with their recipes plus they had more on the internet.

i did not realize that some of the same things were on the internet....ugh

now I guess I'll have to look up every recipe that's on every pamphlet and in this cookbook to make sure it's not on the internet. oh happy day

 
Marsha, made the rice with mushrooms and almonds that you first posted...

I didn't have that brand of rice, but enjoyed the recipe, thanks for sharing. Made it with some sauteed tilapia, I'm on a tilapia kick right now, it's a good tasting fish, imo.
