The North African Leg of Lamb with Couscous and Grilled Vegetables was terrific!

I grilled it on my Weber charcoal grill yesterday.

I just had my island neighbor girlfriend over and she couldn’t believe it was a Weber recipe and really loved it. So did I. She even sniffed the doggy bag I gave her filled with lamb and a Ziploc of grilled veggies - LOL

After the butcher deboned the lamb for me and cut off most of the fat, I found that it was quite a bumpy piece. I trimmed off even more fat and sinew and decided to keep some bumpy for me (I like mine medium rare) and some flat for my girlfriend and the cooking time was one hour and perfectly done to please both of us (with me getting more medium rare of course…). I cut slits in the lamb and pressed the marinade in real good wearing rubber gloves and marinated it overnight. I cut down on the expensive mint for the marinade (used less than two 2/3 oz. packages reserving a small amount for the couscous that I never made.

I omitted the couscous because I was just not in the mood for making it – too much work while I was grilling and had to chop the veggies beforehand. I spent pretty much the entire weekend catching up on things having my first full weekend off in over three months. I just nuked some Green Giant frozen roasted potatoes that are really good.

The veggies were grilled after taking the lamb off to rest, but the 15 minutes to cook even for those that take longer as the recipe stated, was not long enough. Um, some were not so crunchy… No problem though as there are still leftovers that I can broil or simply nuke tonight.

Blue Bell Banana Pudding ice cream for dessert. Yum!

Wish I had remembered to take a photo of it on the grill, but here’s a couple of photos. The lamb was just so flavorful and am looking forward to more leftovers. I think I’ll freeze some tonight. Any ideas for leftover lamb?

DH loves lamb and I think some crumbled feta on the vegetables and the couscous

on the side will make a great vegetarian main course. I'm saving this recipe smileys/smile.gif
