I haven't made this for many years, but I think it sounds like breakfast.
Overnight Tea Bread
Makes 2 small loaves
4 cups self-raising flour
pinch salt
1 1/4 tsp cinnamon
1 1/4 tsp mixed spice
3 cups mixed dried fruit
1 cup dark brown sugar
2/3 cups chopped dates
1 cup hot tea, freshly made
2 large eggs, beaten
2 1/2 tbs lime marmalade (I use orange)
1. Put fruit, sugar and tea in a bowl, and leave overnight.
2. Next day add the rest of the ingredients.
3.Mix thoroughly and divide between two small foil lined bread tins.
4. Bake at 325 F for 1 - 1 1/2 hours
The finished loaf keeps moist for several days and also freezes well. To be eaten sliced and buttered.
