These look interesting, a new kind of springform. Anyone try 'em?

As with so many things, not so new. I've had a similar pan for about 30 years. Not non-stick though.

My pan came with two centers- a ring like in this pan and a center tube with ring for making angel food cakes.

and not so expensive. I hope someone posts a response to let us know just how

leakproof they are. Seems like they'd work. My original good ones were $70 each in the early 90s in Europe and I figured they'd last a lifetime. These seem like such a bargain.

Marg, my old version works great if using a shortbread-type crust

I rarely use a crumb-type crust but have done in the past and really had no problem. The weight of the cheesecake batter held the disk down enough so no leaking.

That's pretty much been my results from WS' fancy junk store...

soda siphon: 3 tries, each died within a few weeks of light use.

pudding mold: leaked like a sieve and turned into a rusty non-food grade piece of junk after 1 use.

larding needle: made of cheap tin alloy that bent going through the first roast

etc.

etc.

etc.

I don't go there anymore.

Pretty stores though.

Yeah, remember the "old days" when WS sold REAL cooking stuff?

Now I won't even buy stuff from them. I'd rather pay the price of ordering and shipping from Zabar's or the other "real" cooking places. Trendy junk is what mostly I find and I want real stuff because I use it hard.
