These were a hit! Toasted Coconut Blondies. A couple changes.

Reviewers said there was almost too much chocolate. I wanted something simple so I eliminated the chocolate altogether. I also wanted something chewy so I baked it in an 8x8 pan for 36 minutes. As they came out of the oven, I immediately stuck them in the refrigerator and let them chill overnight. Cut into 1" squares, these were definitely a hit and I'll be making them again soon. (Kicking around the idea of adding chopped dried cherries or mango.)http://www.epicurious.com/recipes/food/views/Coconut-Blondies-11609

You might want to try 3/4 C mini choc chips if you can find them. . .

and I wonder how this recipe would be with a nice, tangy lemon flavored layer in the middle? Or maybe flavoring the cream cheese part from a cream-cheese brownie recipe with lemon and dabbing it in?

I am going to try these, just as you suggest.
