Michael I see that about a year ago you bought a referb one from Lee Ann, are you pleased with it?
I have never been to a demonstration, just watched The Blender Lady utubes. Then this week the editor of the Washington Post Food section did a talk to sell his vegetable book. During his presentation he made the most wonderful pea soup in his Waring version of Vita Mix. The soup was velvety smooth even with the ice cubes he thru in. That reminded me how much I would like one. I read the thread from here and know that everyone here who has one loves it.
He did not hand out the pea recipe because it was so simple, here it is?
*cook about 1/2 to 3/4 of a large bag of peas
*put some full fat Greek yogurt in your VitaMix, maybe about 1/2C?
*add fresh mint, chives and salt
*add most of the peas, keeping some aside
*drizzle a bit of olive oil
*add several ice cubes
*whirl away
Meanwhile mash the rest of the peas with a couple of T of crumbled feta, salt and a bit of olive oil.
Pour soup into a bowl. Place pea mash on a toasted crouton, float in soup, sprinkle with some minced mint and another drizzle of olive oil..
OH BOY was that good!!!
I want to do it in mini glasses as an appetizer for my next dinner. And I think I might add a few pine nuts to the pea mash.
