PINEAPPLE MACADAMIA NUT CASSEROLE

Amount Measure Ingredient -- Preparation Method

4 c. fresh bread cubes1 can pineapple tidbits -- (20 oz.) drained

3 eggs -- beaten

1 c. butter -- melted

2 c. sugar

1 jar macadamia nuts -- chopped coarsely

Toss together bread cubes and pineapple and place in a greased 2 qt. baking dish. Combine remaining ingredients and pour over pineapple. Bake at 350 degrees for 30 minutes. I sprinkle the nuts on top. Casserole can be made up and refrigerated overnight before baking. Reheats well. Good for brunch or with ham dishes.

I made this yesterday for a Farmer's Market potluck and once again, rave reviews. I used pecans

this time. A bit easier on the pocketbook.
