This is a delicious summer salad. The dressing definitely makes it.

Chicken and Mango Salad

Sesame- Ginger Dressing:

1/4 cup neutral tasting oil - sunflower/or safflower oil

3 tbsp seasoned rice vinegar

2 tbsp dark sesame oil

1 tbsp liquid honey

1 tbsp soya sauce - reduced sodium

2 tsp fresh gingerroot- grated

1 tsp. minced garlic

1/4 tsp. sea salt

1/8 tsp. crushed red pepper flakes - optional

Salad:

1 large ripe mango, peeled and thinly sliced

1 large red bell pepper, thinly sliced

1 cup packed grated carrots

1/2 cup thinly sliced red onions

1/3 cup coarsely chopped cilantro (or mint)

6 cups mixed greens

3 cooked medium chicken breasts, thinly sliced or chopped

chopped cashews, peanuts or sesame seeds for garnish

makes 6 servings

It does sound good. And if you have any mangoes left over or can get more good ones, try this

A couple weeks ago I made a mango-blueberry pie on a whim. Didn't know if it would be a good combo or not. It was a hit. My DH went nuts over it.

A few days ago I made two more for friends. Each party consumed half a pie at one sitting and one of them tiptoed out to the refrig in the middle of the night for a second try at it.

I don't really have a true recipe but here is what I used:

pie crust (second crust lattice) in a deep dish 10" pie plate
about 5 c fresh blueberries
about 1 whole mango, peeled, cut into pieces (I used "canned" mangoes from a jar I got at Costco)
1 c sugar plus a sprinkle for the top
5 generous T flour
about 1/2 tsp cinnamon plus more for the top
about 1-1/2 T butter

Preheat oven to 400.
Mix all except the pie crust, butter and the top sprinkle. Dump into the crust and cut up the butter and "dot". If doing a lattice crust weave it now. If not put the second crust over the top and make sure there are some slits or a center hole for steam. Sprinkle with sugar and cinnamon. Bake about 20 min then turn oven down to 350 and bake another 30 min. Cool down on a rack.

This may sound really odd, but I just might add some diced rhubarb cuz I have it right now.
