This is dinner tonight: Thai Ginger Chicken

3 Tbsp peanut oil

1 Tbsp garlic, minced

1 cup chicken, cut into bite-size pieces

1 cup mushroom, sliced

3 Tbsp fresh ginger, grated

2 Tbsp soy sauce

pinch of sugar

1 Tbsp onion powder

2-3 Thai chile peppers

2 scallions, sliced

cayenne pepper

Saute chicken and garlic over med-high heat for a couple of minutes. Add soy sauce and stir until it returns to a simmer. Combine other ingredients and add to chicken, stirring occasionally, until done.

Serve over jasmine rice.
